In a large bowl whisk together flour, brown sugar, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg until evenly combined.
In a separate bowl whisk the pumpkin puree, milk, egg, melted butter (or oil) and vanilla until smooth and slightly loose.
Make a well in the dry ingredients and pour in the wet mixture; stir gently until just combined — batter should be slightly lumpy; avoid overmixing.
If using mix-ins (pecans or chocolate chips), fold them in now so they’re evenly distributed.
Let the batter rest for 3–5 minutes while you preheat the pan; this helps the baking powder activate and creates fluffier pancakes.
Heat a nonstick skillet or griddle over medium heat and brush lightly with butter or oil; a piece of batter should sizzle when added.
Scoop about 1/4 cup batter per pancake onto the hot surface, leaving space between each pancake for spreading.
Cook until small bubbles form and the edges look set, about 2–3 minutes; check the underside — it should be golden brown.
Flip gently with a spatula and cook the second side 1–2 minutes until puffed and cooked through; adjust heat if browning too quickly.
Transfer cooked pancakes to a warm plate and keep loosely covered with foil while finishing the batch to retain heat.
Serve stacks with butter, maple syrup, whipped cream, toasted nuts or a dusting of cinnamon sugar as desired.
