Preheat oven to 375°F (190°C).
Beat softened cream cheese in a bowl until smooth.
Stir in ricotta and half of the shredded mozzarella until combined.
Mix in Parmesan, garlic powder, oregano, red pepper flakes, salt and pepper.
Spread half of the pizza sauce in the bottom of a cast-iron skillet or oven-safe dish.
Spoon the cheese mixture over the sauce and smooth into an even layer.
Pour remaining pizza sauce over the cheese, leaving some cheese visible at the edges.
Sprinkle remaining mozzarella and provolone evenly on top.
Scatter pepperoni/sausage, olives and pepperoncini pieces across the surface.
Bake 18–25 minutes until cheese is melted and bubbly; broil 1–2 minutes if you want a browned top—watch closely.
Remove from oven and let rest 3–5 minutes; garnish with oregano or fresh basil and serve warm with dippers.
